I’m a big believer in not saving your 💕favorite💕things for *special * occasions...and that’s why this gluten free “holiday” egg casserole has made its way into our everyday, ordinary lives! I prepped this overnight casserole on Monday and baked it on Tuesday just before the crew got home from school. It was the perfect pre-sports mini dinner (you know, the 4pm meal that’s more than a snack, bc they won’t be home to eat a real dinner until 8pm?!).
This combo of eggs, gf bread, chicken sausage & cheese hit most of the food groups and sent my soccer ⚽️ player off with lots of energy. Throughout the week we reheated slices for breakfast as well. I love the make it once, eat it many times types of meals 👍🏻👍🏻👍🏻 What busy mom (or dad) doesn’t 🤷♀️
