Crockpot Pulled BBQ Chicken with Instapot Rice & Roasted Broccoli

This week I have spent more time in my car 🚘 than in my kitchen. This Crockpot BBQ Pulled Chicken is my *lifeline* when I have zero time, but want to get a hot and healthy gf meal on the table for my family.



This one‘s so easy, that I can’t even really call it a recipe. I served it over white Basmati rice 🍚 and a side of roasted broccoli 🥦 . It also makes for great sandwiches on your favorite gf rolls. I once served it on sliders at a NYE party...very versatile 😂. Use leftovers for lunches, bbq chicken nachos or wrapped in a gf tortilla with some cheese 🧀 - don’t hesitate to make a little extra!

Aside from fabulous flavor, my favorite thing about this meal is that you can throw the chicken & bbq sauce in the crockpot in less than 5 minutes, leave for the day, and come

back to a warm and satisfying meal 👍🏻👏🏻👊🏻.

Make the rice 🍚 in your Instapot to save time ⏰: 2 cups of rice, 2 cups of water, 1tbsp coconut oil and 1 tsp salt. Set it to 3 min manual. After the 3 minutes, let it sit for 10 min before you release the vent. Percent rice!

Roasted broccoli is my favorite way to enjoy it. I often buy the precut organic to save time mid week. Make sure the broccoli is washed and completely dry before placing it in a pan in a single layer. Drizzle with olive oil and sprinkle with salt, pepper and garlic powder to taste. Turn to ensure evenly coated. Roast at 400 for 10-15 min depending how you like it. Give it a turn half way through. I like mine crispy so I leave its in for 15 min or so!


*use a high quality GF BBQ sauce for best results (No high fructose corn syrup). I like Stubbs or Bone Suckin’ Sauce - both available on most mainstream grocery stores.


Ingredients:

  • 2 lbs boneless, skinless chicken breast

  • 1 bottle of good quality bbq sauce

  • Salt

  • Garlic Powder

  • Cooking Spray

Preparation:

Spray your crockpot with cooking spray. Add chicken breasts and season both sides with salt and garlic powder.


Set crockpot to low for 5-6 hours and go about your day! Full disclosure- I left it for 8 and it was still perfect. Shred chicken toward then end of cooking time & return to crockpot to soak up the sauce.

Serve with rice and broccoli.
