Turkey Taco Cauliflower Rice Bowls (FM Detox Compliant)

This is a fun and tasty dinner AND it's detox compliant!


Ingredients:

1 Lb ground turkey (organic if possible)

1 lb bag Cauliflower Rice (fresh or frozen)

1/2 Cup Water

Olive Oil Spray

Homemade Taco Seasoning (can be prepared ahead)

1 tablespoon chili powder

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

1/4 teaspoon dried oregano

1/2 teaspoon paprika

1 1/2 teaspoons ground cumin

1 teaspoon salt

1 teaspoon black pepper

Toppings:

Diced Avocado

Black Beans

Chopped Tomatos

Shredded Romaine

Black Olives (in water, not in vinegar)


  • Preheat oven to 425

  • Lightly spray rimmed sheet pan with cooking spray

  • Spread riced cauliflower out on the sheet pan

  • Sprinkle 1 Tbsp of the taco seasoning and lightly spray with olive oil ( just a few pumps)

  • Toss cauliflower and seasoning on the pan and re-spread to an even layer

  • Roast for 15-25 min, until desired texture, turning over with a large spoon halfway through.

  • Brown 1lb of ground turkey in a large skillet

  • Add taco seasoning (either all or half of what is left, depending on your desired level of flavor/spice) & 1/2 Cup of water. Simmer for 10 minutes.

  • Fill bowls with 1- 1 1/2 cups of the Roasted Cauliflower Rice, 1/2 - 1 cup of turkey taco meat, and layer on desired toppings!
