Sweet Potato šŸ  Hash with egg šŸ³, and avocado šŸ„‘

This Sweet Potato šŸ  Hash with an over easy egg šŸ³, and avocado šŸ„‘ was quick to put together for dinner. The bright colors and bold flavor brightened up the gloomy day we had N of Boston todayā˜”ļø.


Layer cooked quinoa on the bottom for a heartier bowl, and drizzle sriracha on top to kick it up a notch šŸ”„.


I didn’t use a recipe, but here are the ingredients. Adjust the measurements for a larger batch- this served 2 (my kids ate pasta šŸ™„). Feel free to sub in whatever veggies you have hanging around! I used a cast iron pan šŸ‘šŸ»šŸ‘šŸ»



Ingredients:

1 small sweet potato, peeled & diced 1/2 shallot, diced 1/4 red onion, diced 1 clove garlic, minced 1-2tbsp olive oil 1/2 cup grape tomatoes, halved 1 small bunch/ handful of kale, sliced into ribbons Salt & pepper to taste

Preparation:

In a cast iron pan, sautĆ© shallot, onion and garlic until soft. Add sweet potato and cook until slightly softened ( 5-7 min). Add tomatoes šŸ… and kale 🄬 , sautĆ© until potatoes are soft and slightly browning.

In a separate pan, cook an over easy egg šŸ³

Portion into 2 bowls. If serving with quinoa, add it to the bowl first and then spoon the hash on top. Place the egg on top, add avocado slices and optional drizzle of sriracha
