Sweet Potato ๐Ÿ  Hash with egg ๐Ÿณ, and avocado ๐Ÿฅ‘

This Sweet Potato ๐Ÿ  Hash with an over easy egg ๐Ÿณ, and avocado ๐Ÿฅ‘ was quick to put together for dinner. The bright colors and bold flavor brightened up the gloomy day we had N of Boston todayโ˜”๏ธ.

Layer cooked quinoa on the bottom for a heartier bowl, and drizzle sriracha on top to kick it up a notch ๐Ÿ”ฅ.

I didnโ€™t use a recipe, but here are the ingredients. Adjust the measurements for a larger batch- this served 2 (my kids ate pasta ๐Ÿ™„). Feel free to sub in whatever veggies you have hanging around! I used a cast iron pan ๐Ÿ‘๐Ÿป๐Ÿ‘๐Ÿป

Ingredients:

1 small sweet potato, peeled & diced 1/2 shallot, diced 1/4 red onion, diced 1 clove garlic, minced 1-2tbsp olive oil 1/2 cup grape tomatoes, halved 1 small bunch/ handful of kale, sliced into ribbons Salt & pepper to taste

Preparation:

In a cast iron pan, sautรฉ shallot, onion and garlic until soft. Add sweet potato and cook until slightly softened ( 5-7 min). Add tomatoes ๐Ÿ… and kale ๐Ÿฅฌ , sautรฉ until potatoes are soft and slightly browning.

In a separate pan, cook an over easy egg ๐Ÿณ

Portion into 2 bowls. If serving with quinoa, add it to the bowl first and then spoon the hash on top. Place the egg on top, add avocado slices and optional drizzle of sriracha
