Fast 💹tracked “GF Thanksgiving Dinner”& Bonus recipe for leftovers (if you have any)!

I originally shared this on facebook, but I wanted to add it here so that it would be easy to get back to! I'm doing that with several old posts so bear with me. Hope you enjoy it as much as we did!


I had all good intentions of making this over the weekend and well...I just skied ⛷ too much đŸ€Ł and we ate pizza 🍕 instead (gf of course!).




So, now it’s Monday and I have this boneless turkey breast and all of the ingredients for gf fixings, but not a whole lot of time...


With a few short cuts, I was able to prep this dinner in about an hour this afternoon. Cook time this evening was around 30 min. Too time consuming for a Monday? It's the perfect Sunday night meal.

  • Roast turkey 🩃 (cheat: I used a boneless turkey breast from our local fave #butcherboymarket, seasoned it with s&p, garlic powder and smoked paprika and cooked it in the #instapot on top of two 2 halved yellow onions and 1.5 cups of chicken stock. Around 5 min per pound is the general rule but my 3.6 pounder wasn’t completely done after 20 min 😞(my Instapot may be on its last legs). I finished it in the oven on convection roast and broiled it for a few min to crisp the skin. Check that the internal temp is 175 to ensure it’s done.

  • Simple fresh cranberry sauce. I used this recipe from #ambitiouskitchen. It's a family fave. I skipped the whiskey - its a weeknight ;)

  • Gf stuffing....cheat: I used boxed stuffing from #aleias gluten free and pre-chopped mirepoix (diced onion, carrot and celery) from #stopandshop). Follow the recipe on the box. Trust me no one will care that it's not homemade.

  • Don't skip the gravy! Homemade GF Gravy is key AND its simple to make. Just add 1/4 GF flour (I use a 1:1 like #Cup4Cup or #bobsredmill) to COLD turkey drippings with chicken or turkey broth to equal 2 cups, and 1/4 cups of butter. Whisk until lumps are gone and gravy has thickened. Use this recipe if you need step by step instructions

  • Roasted broccoli đŸ„Š (cheat: I used pre-chopped organic florets from @stopandshop. Place washed & throughly dried broccoli in a metal baking dish, drizzle with olive oil, and sprinkle with S&P and garlic powder. Pop in the oven at 375 convection roast ot bae at 425 for ~15min (oven times vary).

  • Pumpkin pie for dessert đŸ„§....cheat: I used a @midelbrand ready made gf crust and a quick homemade filling. If you have a favorite filling recipe, use it or try this one from #simplyglutenfree.

Gluten free cooking can be simple to prepare and taste great. Don’t feel bad about taking some short cuts to make it happen mid-week or anytime for that matter! đŸ€« đŸ‘đŸ» 🩃 đŸ„§


Have leftovers? Make one night’s turkey dinner into a gf turkey pie đŸ„§ for another busy day!

Layer your leftover GF stuffing on the bottom, top with diced turkey 🩃, chopped roasted broccoli đŸ„Š and homemade gravy, and top with mashed potatoes đŸ„”. Once cooled, wrap it up and pop it in the freezer. Can be reheated from frozen @350 for 20-30 min (oven times vary).
