This Sweet Potato 🍠 Hash with an over easy egg 🍳, and avocado 🥑 was quick to put together for dinner. The bright colors and bold flavor brightened up the gloomy day we had N of Boston today☔️.
Layer cooked quinoa on the bottom for a heartier bowl, and drizzle sriracha on top to kick it up a notch 🔥.
I didn’t use a recipe, but here are the ingredients. Adjust the measurements for a larger batch- this served 2 (my kids ate pasta 🙄). Feel free to sub in whatever veggies you have hanging around! I used a cast iron pan 👍🏻👍🏻
Ingredients:
1 small sweet potato, peeled & diced
1/2 shallot, diced
1/4 red onion, diced
1 clove garlic, minced
1-2tbsp olive oil
1/2 cup grape tomatoes, halved
1 small bunch/ handful of kale, sliced into ribbons
Salt & pepper to taste
Preparation:
In a cast iron pan, sauté shallot, onion and garlic until soft. Add sweet potato and cook until slightly softened ( 5-7 min). Add tomatoes 🍅 and kale 🥬 , sauté until potatoes are soft and slightly browning.
In a separate pan, cook an over easy egg 🍳
Portion into 2 bowls. If serving with quinoa, add it to the bowl first and then spoon the hash on top. Place the egg on top, add avocado slices and optional drizzle of sriracha
